Low Fat Barbeque Burritos
Some of us are still trying to keep our full figures from getting any fuller this year! This recipe is quick and low fat and should help to keep that figure in shape!
3 bonelss skin free chicken breasts cut into 1-2 inch cubes
6 multi-grain medium sized tortillas
1/4 - 1/2 onion chopped
2 cups of spinach
1 8 oz package of any type of mushrooms
1-2 TBSP of Olive Oil
1 small can chili peppers chopped
Garlic salt, minced garlic, cumin, salt, and pepper to taste
1 can fat free refried beans
6 oz low fat or fat free cheddar or monterey jack cheese
1 bottle any style barbeque sauce
This recipe is great and very versatile. You can replace the vegetables with any combination that you wish and play around with the spices til it is as spicy as you like.
Preheat the oven to 350 degrees. In small sauce pan, start heating the refried beans and remember to keep stirring them. In the meantime, spray a frying pan or put some olive oil in the pan and brown the chicken on both sides with the garlic, then remove. Put in the onions and cook til clear. Put in some more oil, add spinach and mushrooms and cook until soft. Add back in the chicken, the chili peppers and spices and cook for 1-2 minutes until hot.
Take the tortillas and microwave or grill them until soft. Put 1/6 of the beans at the bottom of each tortilla, then add 1/6 of the chicken and veggie mixture and roll up the tortilla. Wrap up the tortilla and brush barbeque sauce around the outside of the tortilla. Place into a pre-sprayed baking dish and bake for 15 minutes.
Serve with a nice side salad for a quick low fat supper.
